Is whole milk made by the water and solids and then added back fat?
I thought the whole milk is out and when it is a cow, then pasteurized and homogenized. However, recently, I was told that this is done in the same way that a 1%, 2% and skim milk, which landed next to water, grease and solids, and then returns to the manufacturer to add the components together. Is this true? If so, are there milk manufacturers not do.
I've been in food development for 30 years and has visited many dairy business. I've never seen anyone remove the fat, and then add. There are two reasons why not do it. 1. There is no place to store fat until they are ready to add it (is to solidify and can not be pumped) and 2. too expensive. No one should incur additional costs unnecessarily. It is now possible, even likely that dairy milk fat normalize. This means that 3.5% deal. Could obtain 3.7% milk and mix with low fat milk to give 3.5%. It is true that not have to change nutrition labels of all time and the fact that cows give different amounts of fat in milk. Who told you I was completely wrong. doctorate in food chemistry and nutrition.

The Good Fat Cookbook $14.99 Good news. The good fats — butter, chocolate, eggs, coconut, olive oil, avocado, fish and shellfish, among many other favorites — are not only delicious, they’re good for your brain, heart, immune system, hormones, skin, memory, and emotional well-being. Whatever you think you know about fat, forget it. After two decades of the low-fat diet trend, Americans are fatter — and less healthy — than ever before. For many, those torturous no-fat, low-fat diets are outright health hazards, contributing to everything from premature wrinkling and depression to hormone dysfunction and even cancer. In The Good Fat Cookbook, best-selling author Fran McCullough delivers the delicious news. Here is powerful evidence that not only have we been sold a bill of low-fat goods, but the foods we love to eat — real butter, chocolate, coconut, whole milk and cream, nuts, avocados, cold-water fish, red meat, olive oil, bacon and eggs — are actually good for us. Not only does fat not make you fat, the good fats slow the effects of aging, improve mood and memory, boost the immune system, and protect against catastrophic disease such as stroke and cancer. And the most surprising news of all: the right fats are great tools for weight loss — they make you fuller faster and for longer and jump-start your metabolism. McCullough debunks fat myths and demystifies cutting-edge science, while exploring all aspects of the fat phenomenon, fork in hand. More than a hundred simple recipes — Salmon Chowder, Tuna with Rice, Deep-Fried Coconut Shrimp, Parsley Salad with Avocado, Chicken with Olives and Oranges, Grilled Cheese with Oregano, Crisp Coconut Waffles, Avocado Cheesecake, and Wall-to-Wall Walnut Brownies — put the good fats back on your table, and McCullough offers spirited advice on everything from the best cooking oils and tastiest canned tuna to nutritional supplements and testing for your fatty-acid profile. Her hundreds of thousands of low-carb fans will be overjoyed to see that most of the recipes here are perfect for them as well. Fran McCullough is the author of the best-selling The Low-Carb Cookbook and Living Low-Carb. She won a James Beard Award for Great Food Without Fuss and, since 1999, has been the editor of the annual Best American Recipes anthology series. A graduate of Stanford University, McCullough began her career as an editor, discovering Sylvia Plath, Pulitzer Prize winner N. Scott Momaday, and National Book Award winner Robert Bly as well as Richard Ford. She also edited and published a distinguished list of cookbook authors, including Diana Kennedy, Paula Wolfert, and Deborah Madison. Her website address is www.blackdirt.net/lowcarb |

Fat Girls and Lawn Chairs $8.99 Cheryl Peck has many stories to tell-of her naughty cat, her quirky family, and her experiences as a large gay woman in the American heartland. Now in a potpourri of real tales by turns poignant and laugh-out-loud funny, Cheryl talks about family and growing up, love and loss. With self-deprecating humor and compassionate insight, she remembers the time she hit her baby sister in the head with a rock, how her father taught her to swim by throwing her into deep water, and the day when-while weighing in at 300 pounds-she became an inspirational goddess at her local gym. Fat $11.81 Rob Grant’s new novel is a revelation. After INCOMPETENCE we would all have expected a killingly funny satire. And in its satire of our obsession with body image, of how the media makes us what we are FAT is certainly that. But in its depiction of Grenville, a fat man at his wits end with the need to be thin; of Hayleigh, a teenage girl obsessed with her terror of being fat and of Jeremy, the self-absorbed, self-adoring ‘conceptualist’ employed to promote the government’s new ‘Fat Farms’ Rob Grant has given us, yes a very, very funny book, but also an immensely moving and personal novel about how we all feel about our bodies. As Grenville deals with the humilation and daily indignity of being fat, as Hayleigh struggles to deal with her anorexia and as Jeremy comes to terms with the dangerous lies at the centre of the government’s new health regime FAT takes us on a hilarious and thought-provoking journey through our all-consuming obession with fat. This is a hilariously moving, movingly hilarious novel and marks a massive step-change in Rob Grant’s growth as a writer. Here is a hugely commerical new voice in mainstream, high concept, high in poly-saturates, commercial fiction. It’s also safe to say that with this new novel, he’s writing about what he knows . . . |

Eat Fat, Lose Fat $12.99 Based on more than two decades of research, Eat Fat, Lose Fat flouts conventional wisdom by revealing that so-called healthy vegetable oils (such as corn and soybean) are in large part responsible for our national obesity and health crisis, while the saturated fats traditionally considered “harmful” (from such foods as coconut, butter, and meat) are essential to weight loss and health. Just in time for the FDA’s new mandatory trans fats labeling, the three programs in this book, which features delicious recipes, show that eating healthy fats is the answer to losing weight and achieving good health for a lifetime. “If permanently losing weight while improving your health is a real goal, I highly recommend Eat Fat, Lose Fat .”—Dr. Joseph Mercola, bestselling author of The No-Grain Diet “Dr. Mary Enig and Sally Fallon are two of the most important voices in the wellness revolution. Fat History $75 The modern struggle against fat cuts deeply and pervasively into American culture. Dieting, weight consciousness, and widespread hostility toward obesity form one of the fundamental themes of modern life. Fat History explores the meaning of fat in contemporary Western society and illustrates how progressive changes, such as growth in consumer culture, increasing equality for women, and the refocusing of women's sexual and maternal roles have influenced today's obsession with fat. Brought up-to-date with a new preface and filled with narrative anecdotes, Fat History explores fat's transformation from a symbol of health and well-being to a sign of moral, psychological, and physical disorder. |

Fat Shame $70 To be fat hasn’t always occasioned the level of hysteria that this condition receives today and indeed was once considered an admirable trait. Fat Shame: Stigma and the Fat Body in American Culture explores this arc, from veneration to shame, examining the historic roots of our contemporary anxiety about fatness. Tracing the cultural denigration of fatness to the mid 19th century, Amy Farrell argues that the stigma associated with a fat body preceded any health concerns about a large body size. Firmly in place by the time the diet industry began to flourish in the 1920s, the development of fat stigma was related not only to cultural anxieties that emerged during the modern period related to consumer excess, but, even more profoundly, to prevailing ideas about race, civilization and evolution. For 19th and early 20th century thinkers, fatness was a key marker of inferiority, of an uncivilized, barbaric, and primitive body. This idea—that fatness is a sign of a primitive person—endures today, fueling both our $60 billion “war on fat” and our cultural distress over the “obesity epidemic.”. Farrell draws on a wide array of sources, including political cartoons, popular literature, postcards, advertisements, and physicians’ manuals, to explore the link between our historic denigration of fatness and our contemporary concern over obesity. Her work sheds particular light on feminisms’ fraught relationship to fatness. From the white suffragists of the early 20th century to contemporary public figures like Oprah Winfrey, Monica Lewinsky, and even the Obama family, Farrell explores the ways that those who seek to shed stigmatized identities—whether of gender, race, ethnicity or class—often take part in weight reduction schemes and fat mockery in order to validate themselves as “civilized.” In sharp contrast to these narratives of fat shame are the ideas of contemporary fat activists, whose articulation of a new vision of the body Farrell explores in depth. This book is significant for anyone concerned about the contemporary “war on fat” and the ways that notions of the “civilized body” continue to legitimate discrimination and cultural oppression. |

Fat Rights $70 Author Interview on The Brian Lehrer Show. America is a weight-obsessed nation. Over the last decade, there's been an explosion of concern in the U.S. about people getting fatter. Plaintiffs are now filing lawsuits arguing that discrimination against fat people should be illegal. Fat Rights asks the first provocative questions that need to be raised about adding weight to lists of currently protected traits like race, gender, and disability. Is body fat an indicator of a character flaw or of incompetence on the job? Does it pose risks or costs to employers they should be allowed to evade? Or is it simply a stigmatized difference that does not bear on the ability to perform most jobs? Could we imagine fatness as part of workplace diversity? Considering fat discrimination prompts us to rethink these basic questions that lawyers, judges, and ordinary citizens ask before a new trait begins to look suitable for antidiscrimination coverage. Fat Rights draws on little-known legal cases brought by fat citizens as well as significant lawsuits over other forms of bodily difference (such as transgenderism), asking why the boundaries of our antidiscrimination laws rest where they do. Fatness, argues Kirkland, is both similar to and provocatively different from other protected traits, raising long–standing dilemmas in antidiscrimination law into stark relief. Though options for defending difference may be scarce, Kirkland evaluates the available strategies and proposes new ways of navigating this new legal question. Fat Rights enters the fray of the obesity debate from a new perspective: our inherited civil rights tradition. The scope is broad, covering much more than just weight discrimination and drawing the reader into the larger context of antidiscrimination protections and how they can be justified for a new group. |
