Common Fragrance and Flavor Materials $151 Get a good start in flavor and fragrance chemistry! This book presents a survey of those natural and synthetic fragrance and flavor materials which are isolated and produced commercially on a relatively large scale because of their organoleptic characteristics. It provides information on their properties, methods employed in their manufacture, and their areas of application. ‘…The excellent and concise introduction to this unique industry is followed by extensive information on nearly 500 of the most used fragrance and flavor compounds. Names, molecular formula, physical data, odor and flavor descriptions, uses, and a number of processes for the larger volume chemicals are all included. Successive chapters deal with essential oils, animal secretions, quality control, toxicology and literature. The formula, name and CAS registry number index is an invaluable and timely addition.’ Parfumer and Flavorist ‘…This book provides a lot of useful information in one place, and it is an especially good resource for somebody just entering the flavor and fragrance industry.’ Journal of Medicinal Chemistry ‘You’ll find much information in this book not found in other works.’ Foster’s Herb Business Bulletin ‘Particularly useful for natural product chemists, those in the product development and the curious.’ Herbalgram |

Flavor Perception $250 Unlike other human senses, the exact mechanisms that lead to our perception of flavor have not yet been elucidated. It is recognised that the process involves a wide range of stimuli, which are thought likely to interact in a complex way, but, since the chemical compounds and physical structures that activate the flavor sensors change as the food is eaten, measurements of the changes in stimuli with time are essential to an understanding of the relationship between stimuli and perception. It is clear that we need to consider the whole process – the release of flavor chemicals in the mouth, the transport processes to the receptors, the specificity and characteristics of the receptors, the transduction mechanisms and the subsequent processing of signals locally and at higher centres in the brain. This book provides a state-of-the-art review of our current understanding of the key stages of flavor perception for those working in the flavor field, whether in the academic or industrial sector. In particular, it is directed at food scientists and technologists, ingredients suppliers and sensory scientists. |

American Flavor $16.99 Andrew Carmellini, two-time James Beard Award winner, acclaimed author of Urban Italian , and executive chef–owner of the hit New York City restaurants Locanda Verde and The Dutch, takes readers on a wonderfully rich and diverse tour through the ingredients and cuisines that constitute American flavor For most of his life, Andrew Carmellini has been hitting the road, tasting the best of American flavors. Whether on childhood trips escaping from the hard-bitten winters of Ohio to sunny Florida and its fresh citrus fruit, cross-country trips in pursuit of the Great American Breakfast, or five-meal-a-day swings through barbecue country, he absorbed everything he could about regional cooking, American-style, at every stop. In American Flavor , Carmellini shares the lessons of his culinary life on the road in recipes and stories that get at the soul of how we eat today. Using the traditional regional foodways and the multicultural neighborhoods, global eateries, and ethnic groceries that dot the American landscape as his inspiration, he introduces delectable, enticing dishes that deliver maximum impact yet are surprisingly simple to make. In the book, you’ll find cheese pierogies inspired by the Polish church ladies of Carmellini’s native Cleveland right next to his take on savory-sweet barbecued beef short ribs from L.A.’s Korea Town; seriously smoky southwestern mole alongside savory lamb stew that takes its flavors from Astoria, the historically Greek neighborhood in Queens, New York. Every recipe reflects Carmellini’s laid-back style, midwestern roots, big-city palate, and dedication to great ingredients and serious flavor. Along with the recipes are true-life tales of Carmellini’s crazy culinary travels across America, into Canada, and even to Europe. Whether he’s hunting ramps with the locals during an extern summer at a Virginia mountain resort or sampling some of the surprising off-menu specials at a hippie cafÉ in Vancouver, British Columbia, these hilarious, engaging stories tell the tale of the education of an American chef inside the kitchen—and out. Entertaining and inspiring, American Flavor is a book that readers will turn to again and again, not only for special occasions and everyday meals, but also as a portrait of real American food in the twenty-first century: sophisticated but down-to-earth, rustic but refined, and always deeply flavored and delicious. |

Lot Lizards $4.99 A lot lizard is a female hooker who works a highway truck stop as her territory. When trucker Bill Ketter looks for a little relaxation and release, he discovers, too late, that he has bitten off more than he can chew. In fact, his lot lizard is the one that does the biting–she is a vampire, one of number who move from one truck stop to the next under the watchful and vicious eyes of the repulsive Carsey Brothers. Against his will, Bill becomes one of the undead. He follows the brothers and their cargo to another stop where he meets his ex-wife and children and Bill finds himself battling the vampires and their age-old leader for the life of his teenaged son. LOT 2 $37.95 Jerry A. Fodor presents a new development of his famous Language of Thought hypothesis, the idea that thinking is couched in a symbolic system realized in the brain; since the 1970s this has been at the centre of debate about how the mind works. No one who studies the mind can ignore Fodor's views, expressed in his coruscating and provocative style. – ;Jerry A. Fodor presents a new development of his famous Language of Thought hypothesis, which has since the 1970s been at the centre of interdisciplinary debate about how the mind works. Fodor defends and extends the groundbreaking idea that thinking is couched in a symbolic system realized in the brain. This idea is central to the representational theory of mind which Fodor has established as a key reference point in modern philosophy, psychology, and cognitive science. The. foundation stone of our present cognitive science is Turing's suggestion that cognitive processes are not associations but computations; and computation requires a language of thought. So the latest on the Language of Thought hypothesis, from its progenitor, promises to be a landmark in the study of the mind. LOT 2 offers a more cogent presentation and a fuller explication of Fodor's distinctive account of the mind, with various intriguing new features. The central role of compositionality in the representational theory of mind is revealed: most of what we know about concepts follows from the compositionality of thoughts. Fodor shows the necessity of a referentialist. account of the content of intentional states, and of an atomistic account of the individuation of concepts. Not least among the new developments is Fodor's identification and persecution of pragmatism as the leading source of error in the study of the mind today. LOT 2 sees Fodor advance undaunted towards the ultimate goal of a theory of the cognitive mind, and in particular a theory of the intentionality of cognition. No one who works on the mind can ignore Fodor's views, expressed in the coruscating and provocative style which has delighted and disconcerted countless readers over the years. – ;It is a rare contemporary philosopher whom one looks forward to reading. Fodor is such an exception…long may Fodor enlighten and entertain us. – John Collins The Philosophers' Magazine |

The Brothers’ Lot $5.82 A hilarious and satirical debut novel exploring religious hypocrisy in an Irish grade school. Combining the spirit of Kingsley Amis’s Lucky Jim with a bawdy evisceration of hypocrisy in old-school Catholic education, The Brothers’ Lot is a comic satire that tells the story of the Brothers of Godly Coercion School for Young Boys of Meager Means, a dilapidated Dickensian institution run by an assemblage of eccentric, insane, and often nasty celibate Brothers. The school is in decline and the Brothers hunger for a miracle to move their founder, the Venerable Saorseach O’Rahilly, along the path to Sainthood. When a possible miracle presents itself, the Brothers fervently seize on it with the help of the ethically pliant Diocesan Investigator, himself hungry for a miracle to boost his career. The school simultaneously comes under threat from strange outside forces. The harder the Brothers try to defend the school, the worse things seem to get. It takes an outsider, Finbar Sullivan, a young student newly arrived at the school, to see that the source of the threat may in fact lie inside the school itself. As the miracle unravels, the Brothers’ efforts to preserve it unleash a disastrous chain of events. Tackling a serious subject from the oblique viewpoint of satire, The Brothers’ Lot explores the culture that allowed abuses within church-run institutions in Ireland to go unchecked for decades. The novel inhabits a space where Angela’s Ashes meets the work of Flann O’Brien and Mervyn Peake, while providing a look at a regrettable era that still haunts many countries across the globe. |

Sensory-Directed Flavor Analysis $189.95 Sensory-Directed Flavor Analysis helps chemists unlock the flavor secrets that may be hiding in their chromatograms by translating cold hard numbers into a better understanding of the sense of smell and taste. Using more ancillary techniques helps both sensory scientists and analytical chemists elucidate how various chemicals constituents influence food flavor and appeal. The book discusses important enabling technologies and analytical methods including GC-olfactometry (GC-O) and the application of odor activity values (OAVs), as well as solid-phase dynamic extraction and preseparation techniques. A broad array of applications, in addition to dozens of tables, graphs, gas chromatograms, and pictures, are included throughout the book. |

Biotechnology in Flavor Production $239.95 Biotechnology can deliver complex flavors both as fermentation products and single constituents. Recent developments in transgenic research have spawned numerous studies in the use of metabolic engineering of biosynthetic pathways to produce high-value secondary metabolites that can enhance the flavors of food products. Biotechnology is also playing an increasingly important role in the breeding of food crops for enhanced flavor. This book provides a unique overview of the current state of the art of flavor production through biotechnology, examining the principles and current methods of producing flavors from plants and other organisms. Chapters are included on plant tissue culture, genetic engineering of plants for flavor improvement and genetic engineering of bacteria and fungi for flavor improvement of fermented beverages and dairy products. The book is directed at food scientists and technologists in the food and flavour industries as well as academics and ingredients suppliers. |

Flavor Physics and the TeV Scale $169 This monograph treats the usefulness of flavor physics as probes of the TeV scale, with the aim of providing a timely introduction to the emerging LHC era. By concentrating only with the TeV scale connection, a large part of the B factory output can be bypassed. The emphasis here is on loop-induced processes, which enables the probing of virtual TeV scale physics through quantum processes. Two-thirds of the book is concerned with b s or bs bs transitions. It takes an experimental perspective resulting in selecting processes, rather than the theories or models, as the basis to explore flavor physics as probe of the TeV scale. The guiding principle has been, unless it can be identified as the smoking gun, it is better to stick to the simplest (rather than elaborate) explanation of an effect that requires New Physics. Luckily, focusing on heavy flavor as a probe of TeV scale physics, these technicalities can be engaged, thus acknowledging their beauty, but avoiding getting ensnared by them, while aiming for the deeper, higher scale physics that such probes afford. This tracts orinated as a plenary talk at the SUSY 2007 conference in Karlsruhe, Germany. |

A Countryman’s Lot $11.81 Max and Vicky Hardcastle have a daydream. One day, they’ll sell their cramped city-centre antiques shop and the overflowing upstairs flat and relocate to the beautiful Yorkshire Dales. If they could only find the perfect place to house both family and business, then that fantasy might become a reality. . . When a smallholding in a remote Dales village comes on the market, it seems like the answer to their prayers. Bullpen Farm might need ‘some renovation’, but it has an orchard, outbuildings and all the charm they’ve dreamt of. Before long, the Hardcastles find themselves the proud owners of a collection of ramshackle buildings and the newest members of a close-knit community which seems to have more than its fair share of eccentrics. From the antics of the antiques trade to the uproarious incidents of village life, it turns out that rural living isn’t quite as tranquil as they’d imagined! |
