Mint Chocolate Cookie Recipe This cookie recipe is great to prepare for the post Holiday gifts of thanks. Cookies are also good at any time of year as a festival of wonderful ingredients! • 3 / 4 cup butter • 1 1 / 2 cup firmly packed dark brown sugar • 2 tablespoons water • 2 cups of bitter chocolate chips • 2 large eggs • 2 1 / 2 cups flour • 1 1 / 4 c. tea baking soda • 1 / 2 teaspoon salt • green mint wafers (or mint chocolate mix according to directions below) Directions In a large saucepan over low heat, cook butter, sugar and water until butter melts. Add chocolate chips and stir until partially melted. Remove from heat and continue stirring until chocolate is completely melted. Pour into a minute's walk large mixer bowl and let cool 10. Blend at high speed, beat eggs, one at both. Reduce speed to low and add dry ingredients. Mix gently. Cover the dough with plastic wrap and refrigerate for at least an hour until the dough is easy to handle. Preheat oven to 350 degrees. Line 2 cookie sheets with foil. Roll tablespoons of dough on baking sheets 2 inches. Bake 12-13 minutes and no more. The witnesses should leave the oven looking al dente. "They are cold when Crisp. Immediately after taking cookies from the oven, a cake with mint in the top of each cookie. That mints soften, then stir to cover cookies. Chocolate mint can be placed on top of cookies instead of wafers. See note below. The asparagus can be added at this time if desired.
